An apple a day...

Whip up warming treats to share with friends and family on chilly winter days. We’re sharing two yummy apple based recipes from our team that are sure to delight guests of all ages. Serve with a hot cuppa for morning tea or with dollops of cream or ice cream for a comforting evening dessert. Amy's apple cake

Ingredients

-        2 cups flour

-        ¾ tsp baking soda

-        ¾ tsp salt

-        ¾ tsp cinnamon

-        ¾ tsp ground cloves

-        ½ tsp ground nutmeg

-        1 ¼ cups sugar

-        1 cup vegetable oil

-        2 eggs

-        1 ½ tsp vanilla extract

-        2 cups chopped apples

Method

Preheat oven to 180 degrees Celsius. Grease and line a cake tin.

Place flour, baking soda, salt and spices in a large bowl and whisk to combine.

In a separate bowl, whisk oil and sugar, then whisk in eggs and vanilla.

Pour the wet ingredients into the dry and mix with a wooden spoon until just combined. Stir through apple.

Pour into cake tin and bake for 50 mins to 1 hour. Cool for 10 minutes before turning out onto a rack. Dust with icing sugar and decorate with walnuts (optional) before serving.


Zoe's apple pie

Ingredients

-        ½ cup sugar

-        150g butter

-        1 tbsp water

-        2 egg yolks

-        ½ tsp nutmeg

-        4 cups of sliced apples

-        2 cups of flour

-        1 tsp cinnamon

 Method

Preheat oven to 180°C.

In a bowl, mix the flour and cold butter using your fingers until it looks like breadcrumbs.

Add egg yolks and water, then mix until it forms a dough.

Divide into two portions (one for base, one for top), wrap, and chill in the fridge for 20–30 minutes.

In another bowl, combine: sliced apples, sugar, cinnamon and nutmeg. Toss everything together until the apples are well coated.

Roll out one portion of dough and press it into a pie dish then add the apple filling evenly.

Roll out the second portion and place it on top. Either cover fully and seal edges, or cut strips for a lattice top.

Use a fork to prick holes in the top to let steam escape.

Bake for 35–45 minutes, or until crust is golden brown or apples are soft. Let pie cool for at least 15–20 minutes before slicing and serving.
