We love hosting friends and family for casual gatherings whether it’s a slow Sunday lunch or Friday night drinks in the garden. Spring menu and styling tips

The key to stress free and relaxed entertaining is keeping it simple. A simple menu allows you as the host to enjoy spending more time with your guests than in the kitchen. Prepare all your dishes before guests arrive, with one or two to be gently reheated before serving. Enjoy all that spring has to offer with fresh salads back on the menu. Start with a cheese board followed by a roast vege salad, a green salad, a feta and spinach quiche (can be made the day before and reheated) along with a protein of your choice. We often prepare herb crusted chicken breast before guests arrive which can be sliced and added to the salads as an easy and delicious option.

Cocktails anyone?

A lovely way to start your entertaining is to prepare a delicious cocktail to serve guests on arrival. Making the most of in season grapefruit, we’re loving Grapefruit Margaritas for a zingy, citrussy spin on a classic cocktail. Follow our easy recipe to make the perfect spring aperitif.

INGREDIENTS
Makes 1 cocktail

50 mls tequila
50 mls Triple Sec or Cointreau
100 mls fresh grapefruit juice (plus extra for dipping the glass rim)
Fresh lime juice (to taste)
Sea salt

METHOD
1. Squeeze a grapefruit and dip the rim of a glass into the juice and then press gently into some sea salt on a plate.
2. In a cocktail shaker generously stacked with ice cubes, shake together the Tequila, Triple Sec (or Cointreau) and grapefruit juice and strain into your salt-rimmed glass, adding fresh ice cubes if you like.
3. Spritz with lime juice to taste, for added sharpness.

When hosting a crowd, this recipe can be supersized to make pitchers of margarita. To serve 6, you will need 300ml Tequila, 300ml Triple Sec, 600ml grapefruit juice and lime juice to taste. Mix ingredients together in a large jug with a few handfuls of ice, strain into salt-rimmed glasses and enjoy!
