Time to bake

Being at home more means we can take the time to appreciate the simple pleasure of home baking. During the last few months at home, we’ve discovered that if you have spare time on your hands, those hands might end up being busy in the kitchen. Try a new recipe and treat yourself to some home baking – made with love, home cooked food tastes better.

Afternoon tea

Make an occasion of it and arrange an afternoon tea with full ceremony. Get out the good china, lay the table with pretty linens and brew the tea in your best teapot. And for the final ingredient – you need the perfect (and easy to make) cake to enjoy.

A team favourite

Donna is our wonderful Warehouse Manager and her beautiful banana cake is a firm team favourite at Wallace Cotton. We are sharing the love and sharing this recipe with you. We hope you enjoy making (and eating) it as much as we do. Remember – the cook doesn’t do the washing up!

Donna’s Banana Cake Recipe

Ingredients
250 grams butter
1 ½ cups sugar
3 eggs
4 bananas
¾ cup hot milk
1 tsp baking soda
2 cups flour
2 tsp baking powder

Method

Pre-heat the oven to 180 degrees Celsius or gas mark 4.

Cream the butter and sugar.

Beat in the eggs, one at a time.

Mash the bananas and then add them to the creamed mixture.

Dissolve the baking soda into the hot milk and then add to the mixture.

Sift the flour and add the baking powder.

Mix the dry and wet ingredients together.

Pour mixture into a lined or greased cake tin.

Pop in the oven for 40 minutes.

Once cooked, leave on a rack to cool then dust with icing sugar just before eating.
