We’re sharing a family favourite recipe made every Christmas by one our team and her family which has become a festive tradition. These delicious gingerbread cookies are easy to make (get the kids involved) and go down a treat with a cup of tea.
¾ cup golden syrup
1 cup sugar
3 cups flour
2 Tbsp mixed spice (yes the big spoon!)
3 Tbsp ginger (yes the big spoon too!)
1 Tsp baking soda (the little one)
2 Tbsp milk
Melt butter, syrup and sugar in a large pot and bring slowly to the boil. Simmer steadily for 5 minutes, stirring all the time (a good job for a kid). Remove from heat and sift in flour, ginger and spice. Stir to combine.
Mix baking soda and milk together and add to dough. Stir well to combine.
Put aside for 30 minutes to relax the dough. This is important so that the cookie cutting is easy. It also gives you time to find the cookie cutters.
Roll out dough 5mm thick onto a floured surface. Cut with cookie cutters in festive shapes. Reroll and recut until all the dough is used up.
Place shapes on baking paper lined trays. Cook at 170C for 15 minutes.
Try our Christmas Spritz, a festive twist on a classic Aperol Spritz. Impress your guests with this easy to make cocktail to start your evening fun. We’ve replaced the usual soda water with ginger beer and added plenty of seasonal garnishes for a Christmas feel.
90ml sparkling wine, chilled
2 dashes Angostura bitters
Ginger beer, to top up
Orange wedge, rosemary sprig, star anise and pomegranate seeds to garnish
Add the Aperol to a chilled wine glass filled with ice followed by the sparkling wine and bitters. Top with the ginger beer and gently mix to combine. Garnish with orange, star anise and pomegranate seeds.
An easy starter for Christmas entertaining is a classic cheeseboard. Start with a large wooden board or beautiful wooden tray lined with baking paper then add the suggested ingredients.
Cumin gouda cheese
A brie or camembert cheese
Prosciutto or salami or both
Ripe cherry tomatoes, halved and sprinkled with salt + pepper
Olives with a little dish for the stones
2 or 3 cheese knives so no-one has to wait!
Pile ingredients artfully onto your board in generous helpings to feed a crowd, and enjoy!
