Simple scones

Afternoon tea is not afternoon tea without some piping hot homemade scones.

 Ingredients

-        3 cups standard flour

-        5 tsp baking powder

-        ¼ tsp salt

-        75g butter

-        1 ½ cups milk

Method

Preheat the oven to 220c. Grease or flour a baking tray. Sift the flour, baking powder and salt into a bowl. Rub in the butter with your fingertips until the mixture resembles fine breadcrumbs. Add the milk and quickly mix with a knife to a soft dough. For light and tender scones the mixture should be quite soft and a little sticky. Scrape the dough onto the floured baking tray and flour the top. Working quickly, pat the dough out to a 2cm thickness and with a floured knife cut it into 12 even sized pieces, then separate the scones to allow a 2cm space between them. Brush the tops with milk. Bake for 10 minutes or until golden brown. Place on a wire rack to cool, wrapped in a clean tea towel to keep them soft.

 

Sweet berry jam

Make our quick and easy jam recipe, perfect for topping your scones with.

Ingredients

-        1kg fresh or frozen berries

-        1kg jam setting sugar

Method

Crush berries coarsely with a potato masher or food processor. Combine with jam setting sugar in a large, heavy based pot. Stir over medium heat until sugar dissolves. Increase heat and bring to a full boil. Boil rapidly for 4 minutes, removing any foam with a spoon. Test a small amount of jam on a cold saucer, the surface should wrinkle when a spoon is pushed against through it. If the surface doesn’t wrinkle, return to the boil for 1-2 minutes intervals and test again. Ladle hot jam into warm sterilised jars and seal with a lid. Set aside to cool, then label, date and store in a cool dark place. Makes approx. 4 cups.
