Christmas Cookies

We’re sharing a family favourite recipe made every Christmas by one our team and her family which has become a festive tradition. These delicious gingerbread cookies are easy to make (get the kids involved) and go down a treat with a cup of tea.

Ingredients
125g butter
¾ cup golden syrup
1 cup sugar
3 cups flour
2 Tbsp mixed spice (yes the big spoon!)
3 Tbsp ginger (yes the big spoon too!)
1 Tsp baking soda (the little one)
2 Tbsp milk

Method
Melt butter, syrup and sugar in a large pot and bring slowly to the boil. Simmer steadily for 5 minutes, stirring all the time (a good job for a kid). Remove from heat and sift in flour, ginger and spice. Stir to combine.
Mix baking soda and milk together and add to dough. Stir well to combine.
Put aside for 30 minutes to relax the dough. This is important so that the cookie cutting is easy. It also gives you time to find the cookie cutters.
Roll out dough 5mm thick onto a floured surface. Cut with cookie cutters in festive shapes. Reroll and recut until all the dough is used up.
Place shapes on baking paper lined trays. Cook at 170C for 15 minutes.
