Ruby Seeto, Starship & Wallace Cotton

We’ve been working with Ruby Seeto since 2009, when she was an 11 year old cancer survivor, designing tea towels to fundraise for Starship. Every year, Ruby creates a new design which is produced and sold by Wallace Cotton. This year, Ruby has shared how to create dehydrated citrus slices on her colourful tea towel. With a recipe as simple as it is beautiful, read on to discover how to make the citrus slices and 3 ways we’re using them this spring.

Dried Citrus Recipe

Designed to be used with ease when entertaining, Ruby has shared how to create her dehydrated citrus slices. Use whichever citrus you have handy – our personal picks are sweet oranges and tangy grapefruit.
• Slice citrus thinly, place on a lined tray or wire rack and bake in oven for 2-4 hours at 100 degrees celcius
• Flip the citrus over half way
• Once cool, use to decorate!

Dried Citrus 1: Cake Decorations

Whether you’re celebrating a special occasion, hosting loved ones, or just feel like something sweet, treat your tastebuds to a delicious citrus cake this spring. We used a recipe by The Caker, and decorated it with our dried citrus along with lemon and lime zest.

Dried Citrus 2: Drink Garnishes

We can’t think of a better way to greet the arrival of spring than with a fruity cocktail or mocktail. We’re in love with the simplicity of sangria and can’t wait to try new recipes. When garnished with a slice of dried citrus, you’re sure to impress your guests with minimal effort required.

Dried Citrus 3: Tablescape

Add a layer of interest to your tablescaping this season with pretty dried citrus slices. Scatter a selection of brightly coloured citrus slices across a beautiful tablecloth to make them pop. Add fresh flowers or herbs, candles and beautiful napkins to complete the look. Enjoy your spring gatherings – and be sure to share with us how you’re using your citrus slices!
